I have a new lover and his name is Mr. Instant Vortex Air Fryer! You guys this kitchen miracle has changed my life in like 2 days. I visited my mom in Pittsburgh and although we didn't do much because of hanging low due to COVID, I did get introduced to the air fryer and it was kind of the highlight of my trip. I know that sounds bad, but my mom would totally be okay with this, because she is having her own affair with Mr. Air Fryer (sorry dad!). So, after witnessing the ease in which this gadget works, and how it cooks the food to perfection, I had to get one!
There are tons of air fryers, but I settled on the Instant Vortex Air Fryer (6 quarts) from Target for $99.00. It's a little pricey, but well worth it, since it is already revolutionizing the way I cook, and saving me time and energy. As a busy mom this is already making my life easier and there are so many healthy meals you can whip up!

Ingredients
Sweet Potatoes
Red, Orange, Yellow Peppers
Red Onion
Spring Greens/Spinach
Cranberries
Goat Cheese
Rice/Barley
Turn on the Air Fryer
Turn your air fryer on to 400 for 10 or 11 minutes. It will preheat and alert you to add the food.
Chop Your Veggies
Chop up your sweet potatoes in small cubes and cut the red, orange, yellow peppers in square slices
Place your chopped veggies in a bowl and mix with olive oil, salt and seasoning. My favorite seasoning to use is Pink himalayan salt and Trader Joe's 21 Season Salute
Chop up the Red Onion in small pieces and set aside
Get Cooking!
Add Your Veggies to the air fryer and distribute evenly
Add Some Greens!
Put your fresh greens and spinach in your bowl.
Make Your Rice
I used Trader Joes Medley of Rice that is a mixture of red, brown and barley rice. Put it in the microwave for 3 minutes.
Assemble!
Add the rice, potatoes, peppers, cranberries, goat cheese, and I added some cilantro. This bowl is so flavorful that you won't want even need a dressing! The goat cheese and cranberries along with the sweet potatoes is the perfect blend of sweetness.
